Moist Wet Burritos Recipe

Ingredients

  • For the Filling:
  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4.5 oz diced green chiles
  • 16 oz refried beans
  • 15 oz beanless chili (like Hormel)
  • For the Sauces:
  • 8 oz tomato sauce
  • 10 oz enchilada sauce
  • For Assembly:
  • 6 flour burrito tortillas (approximately 12 inches)
  • 2 cups shredded lettuce
  • 3 cups shredded Mexican cheese
  • Minced green onions (for garnish)
  • Additional toppings (sour cream, jalapeños, salsa, etc.)

Instructions

1. Preheat the Oven:

  • Preheat your oven to 400°F (200°C).

2. Cook the Beef and Onions:

  • In a large skillet over medium-high heat, brown the ground beef with the chopped onion until the meat is fully cooked and the onions are softened, about 5-7 minutes. Drain any excess grease.

3. Season the Mixture:

  • Add the minced garlic, cumin, salt, and pepper to the skillet. Stir to combine.
  • Mix in the diced green chiles and refried beans, stirring until well blended. Keep the heat on low to keep it warm.

4. Prepare the Sauces:

  • In another skillet, combine the tomato sauce and enchilada sauce. Cook over medium heat until warmed through and slightly thickened, about 5 minutes. Remove from heat and set aside.

5. Assemble the Burritos:

  • Take a tortilla and place about 1/6 of the beef and bean mixture in the center.
  • Top with a sprinkle of shredded cheese and lettuce (if using).
  • Fold in the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top, making sure to secure the filling inside. Repeat this process for the remaining tortillas.

6. Arrange in Baking Dishes:

  • Place the burritos seam-side down in two greased 9×13 inch baking dishes.

7. Add Sauce:

  • Pour the warmed tomato and enchilada sauce mixture evenly over the burritos, ensuring they are well covered.

8. Top with Cheese:

  • Sprinkle any remaining shredded cheese over the top of the burritos.

9. Bake:

  • Bake in the preheated oven for about 20-25 minutes, or until the burritos are heated through and the cheese is melted and bubbly.

10. Serve:

  • Remove from the oven and let cool slightly. Garnish with minced green onions and your choice of additional toppings like sour cream, jalapeños, or salsa.
