Mom’s Fudge
Ingredients:
- 3 cups granulated sugar
- 3/4 cup unsalted butter (1 1/2 sticks)
- 2/3 cup evaporated milk
- 2 cups semi-sweet chocolate chips
- 1 jar (7 oz) marshmallow creme (or fluff)
- 1 teaspoon vanilla extract
- 1 cup chopped nuts (optional, like walnuts or pecans)
Instructions:
Step 1: Prepare the Pan
- Line a Pan:
- Line an 8×8 or 9×9-inch baking pan with aluminum foil or parchment paper, leaving some overhang for easy removal.
- Lightly grease the lining with butter or non-stick spray.
Step 2: Cook the Fudge Base
- Melt the Butter and Sugar:
- In a medium saucepan, combine the sugar, butter, and evaporated milk.
- Cook over medium heat, stirring constantly until the mixture comes to a full boil.
- Boil the Mixture:
- Continue boiling for 4-5 minutes, stirring constantly to prevent burning. Use a candy thermometer if you have one; the mixture should reach about 234°F (112°C) (soft-ball stage).
Step 3: Add the Chocolate and Marshmallow
- Remove from Heat:
- After 4-5 minutes of boiling, remove the saucepan from heat.
- Add the Chocolate and Marshmallow Creme:
- Stir in the chocolate chips, marshmallow creme, and vanilla extract. Continue stirring until the mixture is smooth and everything is well incorporated.
Step 4: Add Nuts (Optional)
- Mix in the Nuts:
- If you’re using nuts, stir them into the fudge mixture at this stage.
Step 5: Pour and Set
- Pour into the Pan:
- Pour the fudge mixture into the prepared pan, spreading it evenly with a spatula.
- Let the Fudge Set:
- Allow the fudge to cool at room temperature for about 2-3 hours or place it in the refrigerator for faster setting.
Step 6: Slice and Serve
- Slice the Fudge:
- Once the fudge is completely set, lift it out of the pan using the foil or parchment overhang.
- Slice the fudge into squares or rectangles.
- Serve and Store:
- Store the fudge in an airtight container at room temperature or in the fridge for up to two weeks.
