Okra Stew with Chicken, Sausage, Shrimp, and Crawfish

Ingredients:

  • 1 pound chicken thighs, diced
  • 1/2 pound smoked sausage, sliced
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound crawfish tails (if available)
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound fresh or frozen okra, sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons vegetable oil
  • 2 teaspoons Cajun seasoning (or to taste)
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Fresh parsley for garnish (optional)

Instructions:

  1. Sauté the Meats:
  • In a large pot, heat vegetable oil over medium heat. Add the diced chicken and sausage. Cook until browned, about 5-7 minutes. Remove and set aside.
  1. Cook the Vegetables:
  • In the same pot, add the chopped onion, green bell pepper, and garlic. Sauté until softened, about 5 minutes.
  1. Combine Ingredients:
  • Return the chicken and sausage to the pot. Stir in the okra, diced tomatoes, chicken broth, and Cajun seasoning. Bring to a simmer.
  1. Add Seafood:
  • Cook for about 20-25 minutes, stirring occasionally. Add the shrimp and crawfish tails in the last 5 minutes of cooking. Adjust seasoning with salt and pepper.
  1. Serve:
  • Serve the stew hot over cooked rice, garnished with fresh parsley if desired.

Tips:

  • Add Heat: For extra spice, consider adding hot sauce or red pepper flakes.
  • Thickening: If you prefer a thicker stew, simmer longer or add a bit of cornstarch mixed with water.
