Okra Stew with Chicken, Sausage, Shrimp, and Crawfish
Ingredients:
- 1 pound chicken thighs, diced
- 1/2 pound smoked sausage, sliced
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound crawfish tails (if available)
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 pound fresh or frozen okra, sliced
- 1 can (14.5 ounces) diced tomatoes
- 2 tablespoons vegetable oil
- 2 teaspoons Cajun seasoning (or to taste)
- Salt and pepper to taste
- Cooked rice, for serving
- Fresh parsley for garnish (optional)
Instructions:
- Sauté the Meats:
- In a large pot, heat vegetable oil over medium heat. Add the diced chicken and sausage. Cook until browned, about 5-7 minutes. Remove and set aside.
- Cook the Vegetables:
- In the same pot, add the chopped onion, green bell pepper, and garlic. Sauté until softened, about 5 minutes.
- Combine Ingredients:
- Return the chicken and sausage to the pot. Stir in the okra, diced tomatoes, chicken broth, and Cajun seasoning. Bring to a simmer.
- Add Seafood:
- Cook for about 20-25 minutes, stirring occasionally. Add the shrimp and crawfish tails in the last 5 minutes of cooking. Adjust seasoning with salt and pepper.
- Serve:
- Serve the stew hot over cooked rice, garnished with fresh parsley if desired.
