Old-Fashioned Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup buttermilk (or milk with 1 tbsp vinegar or lemon juice added)
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract (optional)

Instructions:

  1. Prepare the Batter:
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix the buttermilk, egg, melted butter, and vanilla extract (if using).
  1. Combine Wet and Dry Ingredients:
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
  1. Heat the Griddle:
  • Preheat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of butter or cooking spray.
  1. Cook the Pancakes:
  • Pour about 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook until golden brown on the other side (about 1-2 minutes more).
  1. Serve:
  • Serve warm with your favorite toppings such as maple syrup, fresh fruit, or whipped cream.

Tips for Success:

  • Keep Warm: If making a large batch, keep pancakes warm in a low oven (about 200°F or 90°C) until serving.
  • Add-Ins: Feel free to add chocolate chips, blueberries, or nuts to the batter for extra flavor.

Enjoy your delightful old-fashioned pancakes! Perfect for a cozy breakfast!
