Oyster Sauce Beef and Onion Stir-Fry

Ingredients:

  • 1 lb beef sirloin, thinly sliced
  • 1 large onion, sliced
  • 3 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • ¼ cup water
  • Salt and pepper to taste
  • Optional: 1 teaspoon sesame oil (for added flavor)
  • Optional: Sliced green onions and sesame seeds (for garnish)

Instructions:

1. Prepare the Beef:

  • Marinate Beef: In a bowl, toss the thinly sliced beef with cornstarch, soy sauce, and a pinch of salt. Let it sit for 10 minutes. This helps tenderize the beef and gives it a nice coating for stir-frying.

2. Stir-Fry the Onions and Garlic:

  • Heat Oil: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  • Cook Onions: Add the sliced onions and minced garlic to the skillet. Stir-fry for 2-3 minutes until the onions are softened and slightly caramelized.
  • Remove: Transfer the onions and garlic to a plate and set aside.

3. Cook the Beef:

  • Heat Oil: In the same skillet, add the remaining 1 tablespoon of vegetable oil and heat until shimmering.
  • Stir-Fry Beef: Add the marinated beef to the skillet in a single layer. Let it sear undisturbed for about 1-2 minutes, then stir-fry until browned and cooked through, about 3-4 minutes.

4. Combine Ingredients:

  • Add Onions Back: Return the cooked onions and garlic to the skillet with the beef.
  • Add Sauce: Pour in the oyster sauce and water. Stir well to combine and coat the beef and onions with the sauce.
  • Simmer: Continue to stir-fry for 2-3 minutes until the sauce thickens and coats the beef and onions evenly. If you prefer a thicker sauce, you can mix a little more cornstarch with water and add it to the skillet.

5. Finish and Serve:

  • Optional Flavor Boost: For extra depth of flavor, drizzle 1 teaspoon of sesame oil over the stir-fry just before serving.
  • Garnish: Garnish with sliced green onions and sesame seeds if desired.
  • Serve: Serve the stir-fry warm over steamed rice or noodles.

Tips for Success:

  • Thin Slices: Ensure the beef is thinly sliced against the grain to make it tender and easy to chew.
  • High Heat: Cook the beef on high heat to achieve a good sear and avoid steaming it.
  • Preheat Skillet: Make sure your skillet or wok is well-heated before adding the beef to get a nice sear.
  • Rest Beef: Allow the beef to rest after marinating to let the flavors penetrate and the cornstarch adhere.
