Pineapple Juice Cake

Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup pineapple juice
  • 1 tsp vanilla extract

For the Pineapple Glaze:

  • 1 cup powdered sugar
  • 2-3 tbsp pineapple juice (to taste)
  • 1/4 tsp vanilla extract

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Grease and flour your cake pan.

  • In a bowl, whisk together 1 1/2 cups flour, 1 1/2 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp salt. Set aside.

  • In a small bowl, whisk together 1 cup powdered sugar, 2-3 tbsp pineapple juice, and 1/4 tsp vanilla extract until smooth. Adjust the consistency with more pineapple juice if needed.
  1. Glaze the Cake:
  • Once the cake is completely cooled, drizzle the pineapple glaze over the top.
