Sablés Diamant Vanille Recipe
Ingredients:
- 250 g unsalted butter, softened
- 100 g powdered sugar
- 1 vanilla bean (or 1 teaspoon vanilla extract)
- 1 egg yolk
- 320 g all-purpose flour
- 1 pinch of salt
- Granulated sugar (for coating)
Instructions:
Step 1: Prepare the Dough
- Mix the Butter and Sugar:
- In a mixing bowl, cream the softened butter and powdered sugar together until light and fluffy.
- Add Vanilla:
- Split the vanilla bean and scrape out the seeds (or add vanilla extract) and mix into the butter-sugar mixture.

Step 2: Shape the Dough

- Chill the Dough:
- Wrap the logs in plastic wrap and refrigerate for at least 1-2 hours, or until firm enough to slice.
Step 3: Coat and Slice
- Coat with Sugar:
- Once the dough is firm, roll each log in granulated sugar, pressing lightly so the sugar sticks all around.
- Slice the Dough:
- Using a sharp knife, slice the logs into rounds about 1 cm thick.
Step 4: Bake
- Preheat the Oven:
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Bake the Cookies:
- Place the cookie slices on the prepared baking sheet, spacing them slightly apart. Bake for 12-15 minutes, or until the edges are just starting to turn golden.
Step 5: Cool and Serve
- Cool the Cookies:
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
