Savory Hand Pies
Ingredients:
For the Pastry:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 6-8 tablespoons cold water
For the Filling:
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup cooked meat (ground beef, chicken, or turkey)
- 1 cup vegetables (like spinach, mushrooms, or bell peppers)
- 1 teaspoon dried herbs (like thyme or oregano)
- Salt and pepper, to taste
- 1 egg, beaten (for egg wash)
Instructions:
- Make the Pastry:
- In a bowl, mix flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Divide into two discs, wrap in plastic, and refrigerate for at least 30 minutes.
- Prepare the Filling:
- Heat olive oil in a skillet over medium heat. Sauté onion and garlic until soft. Add cooked meat and vegetables, along with dried herbs, salt, and pepper. Cook for a few more minutes until heated through. Let cool.
- Assemble the Hand Pies:
- Preheat your oven to 400°F (200°C). Roll out one disc of dough on a floured surface to about 1/8 inch thick. Cut out circles (about 5-6 inches in diameter).
- Place a spoonful of filling on one half of each circle. Fold the dough over and seal the edges by crimping with a fork. Repeat with remaining dough and filling.
- Bake:
- Place the hand pies on a baking sheet lined with parchment paper. Brush the tops with beaten egg. Bake for 20-25 minutes, or until golden brown.
- Serve:
- Let cool slightly before serving. Enjoy warm or at room temperature!
