Seafood Chowder Recipe

Ingredients:
- 4 slices bacon, diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 celery stalks, chopped
- 1 large carrot, peeled and diced
- 1 cup potatoes, peeled and diced
- 1/4 cup all-purpose flour
- 4 cups chicken or seafood broth
- 1 cup heavy cream
- 1 cup milk
- 1 cup frozen or fresh corn kernels
- 1 cup frozen peas
- 1 cup shrimp, peeled and deveined
- 1 cup white fish fillets (like cod or haddock), cut into bite-sized pieces
- 1 cup clams (fresh or canned), drained if using canned
- 2 bay leaves
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried dill (or 1 tablespoon fresh dill)
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
- Cook the Bacon:
- In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
- Sauté Vegetables:
- Add the chopped onion, garlic, celery, and carrot to the pot. Sauté for about 5 minutes, or until the vegetables are softened.
- Add Potatoes and Flour:
- Stir in the diced potatoes and cook for another 2 minutes. Sprinkle the flour over the vegetables and stir well to combine, cooking for another 1-2 minutes to remove the raw flour taste.
- Add Broth and Simmer:
- Gradually add the chicken or seafood broth, stirring constantly to avoid lumps. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the potatoes are tender.
- Add Cream and Milk:
- Stir in the heavy cream and milk. Bring the mixture back to a simmer, being careful not to let it boil.
- Add Seafood and Seasonings:
- Add the corn, peas, shrimp, white fish, and clams. Add the bay leaves, thyme, and dill. Continue to simmer for another 5-7 minutes, or until the seafood is cooked through and the chowder is heated through. Season with salt and pepper to taste.
