Slow-Cooked Teriyaki Chicken

Ingredients:

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1 cup teriyaki sauce
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced (or 1 teaspoon ground ginger)
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper
  • Green onions and sesame seeds for garnish (optional)
  • Cooked rice, for serving

Instructions:

  1. Prepare the Chicken:
  • Place the chicken in the slow cooker.
  1. Make the Sauce:
  • In a bowl, whisk together the teriyaki sauce, soy sauce, honey, garlic, ginger, sesame oil, and black pepper.
  1. Combine:
  • Pour the sauce over the chicken, ensuring it’s well-coated.
  1. Cook:
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
  1. Shred the Chicken:
  • Remove the chicken from the slow cooker and shred it using two forks. Return it to the slow cooker and stir to coat with the sauce.
  1. Serve:
  • Serve over cooked rice and garnish with chopped green onions and sesame seeds if desired.

Tips:

  • Add Vegetables: Toss in some broccoli or bell peppers for a complete meal.
