Slow Cooker Chicken and Dumplings
Ingredients:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 medium onion, chopped
- 2 medium carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup frozen peas
- 1 can refrigerated biscuit dough (such as Pillsbury Grands)

Instructions:
- Prepare the Slow Cooker:
- In a slow cooker, add the chicken breasts, chopped onion, carrots, celery, chicken broth, cream of chicken soup, garlic powder, onion powder, dried thyme, salt, and pepper. Stir to combine.
- Cook the Chicken:
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
- Shred the Chicken:
- Once the chicken is done, remove the breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker.
