Slow Cooker Pork Chops

Ingredients:

  • 4 bone-in or boneless pork chops, about 1 inch thick
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup Dijon mustard
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Pork Chops:
  • Season the pork chops on both sides with salt and pepper.
  • If desired, heat the olive oil in a skillet over medium-high heat and sear the pork chops for 2-3 minutes on each side until they are golden brown. This step is optional but adds more flavor.
  1. Prepare the Slow Cooker:
  • Place the sliced onions and minced garlic at the bottom of the slow cooker.
  1. Make the Sauce:
  • In a bowl, mix together the chicken broth, heavy cream, Dijon mustard, thyme, and rosemary.
  1. Add Pork Chops to the Slow Cooker:
  • Place the pork chops on top of the onions and garlic in the slow cooker.
  • Pour the sauce mixture over the pork chops.
  1. Cook:
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the pork chops are tender and the internal temperature reaches 145°F (63°C).
  1. Finish the Sauce:
  • About 30 minutes before serving, sprinkle the grated Parmesan cheese over the pork chops.
  • Cover and let the cheese melt into the sauce.
  1. Serve:
  • Garnish with fresh parsley before serving.
  • Serve the pork chops with the creamy sauce over mashed potatoes, rice, or your favorite side dish.
