Slow Cooker Pork Chops
Ingredients:
- 4 bone-in or boneless pork chops, about 1 inch thick
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup Dijon mustard
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Pork Chops:
- Season the pork chops on both sides with salt and pepper.
- If desired, heat the olive oil in a skillet over medium-high heat and sear the pork chops for 2-3 minutes on each side until they are golden brown. This step is optional but adds more flavor.
- Prepare the Slow Cooker:
- Place the sliced onions and minced garlic at the bottom of the slow cooker.
- Make the Sauce:
- In a bowl, mix together the chicken broth, heavy cream, Dijon mustard, thyme, and rosemary.
- Add Pork Chops to the Slow Cooker:
- Place the pork chops on top of the onions and garlic in the slow cooker.
- Pour the sauce mixture over the pork chops.
- Cook:
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, or until the pork chops are tender and the internal temperature reaches 145°F (63°C).
- Finish the Sauce:
- About 30 minutes before serving, sprinkle the grated Parmesan cheese over the pork chops.
- Cover and let the cheese melt into the sauce.
- Serve:
- Garnish with fresh parsley before serving.
- Serve the pork chops with the creamy sauce over mashed potatoes, rice, or your favorite side dish.
