Smothered Chicken with Onions and Mushrooms
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 large onion, thinly sliced
- 2 cups mushrooms, sliced (cremini or button mushrooms work well)
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 teaspoon Worcestershire sauce (optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Chicken:
- Season the chicken breasts with salt, pepper, garlic powder, and paprika on both sides.
- Sear the Chicken:
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken breasts and sear them for about 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- Cook the Onions and Mushrooms:
- In the same skillet, add butter and let it melt.
- Add the sliced onions and sauté for about 3-4 minutes until they start to soften.
- Add the mushrooms and cook for another 5-7 minutes until they release their moisture and turn golden brown.
- Stir in the minced garlic and cook for another 1-2 minutes.
- Make the Sauce:
- Pour in the chicken broth, scraping up any brown bits from the bottom of the pan.
- Let the broth simmer for 3-4 minutes to reduce slightly.
- Stir in the heavy cream and Worcestershire sauce (if using), and cook for another 2-3 minutes until the sauce thickens.
- Combine Chicken and Sauce:
- Return the cooked chicken breasts to the skillet, spooning the onion and mushroom sauce over the chicken.
- Simmer for another 5 minutes, allowing the chicken to absorb the flavors.
- Garnish and Serve:
- Garnish with fresh parsley and serve the smothered chicken hot with rice, mashed potatoes, or over pasta.
