Smothered Chicken with Onions and Mushrooms

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 large onion, thinly sliced
  • 2 cups mushrooms, sliced (cremini or button mushrooms work well)
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon Worcestershire sauce (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken:
  • Season the chicken breasts with salt, pepper, garlic powder, and paprika on both sides.
  1. Sear the Chicken:
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken breasts and sear them for about 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  1. Cook the Onions and Mushrooms:
  • In the same skillet, add butter and let it melt.
  • Add the sliced onions and sauté for about 3-4 minutes until they start to soften.
  • Add the mushrooms and cook for another 5-7 minutes until they release their moisture and turn golden brown.
  • Stir in the minced garlic and cook for another 1-2 minutes.
  1. Make the Sauce:
  • Pour in the chicken broth, scraping up any brown bits from the bottom of the pan.
  • Let the broth simmer for 3-4 minutes to reduce slightly.
  • Stir in the heavy cream and Worcestershire sauce (if using), and cook for another 2-3 minutes until the sauce thickens.
  1. Combine Chicken and Sauce:
  • Return the cooked chicken breasts to the skillet, spooning the onion and mushroom sauce over the chicken.
  • Simmer for another 5 minutes, allowing the chicken to absorb the flavors.
  1. Garnish and Serve:
  • Garnish with fresh parsley and serve the smothered chicken hot with rice, mashed potatoes, or over pasta.
