Snickers Special-K Bars
Ingredients:
- Bars:
- 6 cups Special K cereal
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup chopped peanuts (optional for extra crunch)
- Topping:
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
- 1 cup milk chocolate chips
- 1/2 cup heavy cream
- 1 tablespoon unsalted butter
Instructions:
- Prepare the Pan:
- Line a 9×13-inch baking pan with parchment paper, allowing some overhang for easy removal. Lightly grease the parchment paper.
- Make the Base:
- In a large saucepan, combine sugar and light corn syrup. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
- Remove from heat and stir in peanut butter, vanilla extract, and salt until smooth and well combined.
- Fold in Special K cereal and chopped peanuts (if using) until evenly coated.
- Press the Mixture:
- Transfer the cereal mixture to the prepared baking pan. Press it firmly and evenly into the pan using a spatula or your hands.
- Prepare the Topping:
- In a microwave-safe bowl, combine semi-sweet chocolate chips, butterscotch chips, milk chocolate chips, heavy cream, and unsalted butter.
- Microwave in 30-second intervals, stirring after each interval, until the mixture is melted and smooth.
- Apply the Topping:
- Pour the melted chocolate mixture over the cereal base. Spread it evenly with a spatula.
- Cool and Set:
- Allow the bars to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours or until the topping is firm.
- Serve:
- Once set, use the parchment paper overhang to lift the bars out of the pan. Cut into squares or rectangles using a sharp knife.
