Super Easy Cheesy Spinach

Ingredients:

  • 1 lb fresh spinach (or 10 oz frozen spinach, thawed and drained)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream (or whole milk)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • A pinch of ground nutmeg (optional)

Instructions:

Step 1: Cook the Spinach

  1. If Using Fresh Spinach:
  • In a large skillet or saucepan, melt 1 tablespoon of butter over medium heat. Add the spinach and cook for 2-3 minutes until wilted, stirring occasionally. If the spinach releases water, drain it.
  • If using frozen spinach, simply thaw and drain well to remove excess water.

Step 2: Make the Creamy Sauce

  1. Sauté Garlic:
  • In the same pan, melt the remaining tablespoon of butter. Add the minced garlic and sauté for about 1 minute until fragrant.
  1. Add Cream and Cheese:
  • Pour in the heavy cream (or milk) and bring to a simmer.
  • Stir in the mozzarella and Parmesan cheese until the sauce becomes thick and creamy. Add a pinch of nutmeg if you like for extra depth of flavor.

Step 3: Combine and Season

  1. Mix in the Spinach:
  • Add the cooked spinach to the creamy cheese mixture and stir until well coated.
