Super Quick Stir-Fry Broccoli and Carrot with Chicken
Ingredients:
- 1 pound boneless, skinless chicken breast, sliced into thin strips
- 2 cups broccoli florets
- 2 large carrots, julienned or sliced thinly
- 2 tablespoons vegetable oil (or sesame oil)
- 3 cloves garlic, minced
- 1-inch piece of ginger, minced (optional)
- 1/4 cup soy sauce
- 1 tablespoon honey or brown sugar
- 1 tablespoon cornstarch (optional, for thickening)
- Salt and pepper, to taste
- Cooked rice or noodles, for serving
- Sesame seeds and green onions for garnish (optional)
Instructions:
- Prepare the Sauce:
- In a small bowl, mix together soy sauce, honey (or brown sugar), and cornstarch (if using). Set aside.
- Cook the Chicken:
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken strips and season with salt and pepper. Stir-fry until fully cooked, about 5-7 minutes. Remove the chicken from the pan and set aside.
- Stir-Fry the Vegetables:
- In the same pan, add the remaining tablespoon of oil. Add garlic and ginger (if using), stirring for about 30 seconds until fragrant. Then, add the broccoli and carrots. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- Combine and Cook:
- Return the cooked chicken to the pan. Pour the sauce over the chicken and vegetables. Stir everything together and cook for an additional 2-3 minutes until the sauce thickens slightly and everything is heated through.
- Serve:
- Serve the stir-fry over cooked rice or noodles. Garnish with sesame seeds and sliced green onions if desired.
