Supreme Pork Chops
Ingredients:
- 4 bone-in pork chops, about 1 inch thick
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup Dijon mustard
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Pork Chops:
- Season the pork chops on both sides with salt and pepper.
- Sear the Pork Chops:
- In a large skillet, heat the olive oil over medium-high heat.
- Add the pork chops and sear for 3-4 minutes on each side, or until they are golden brown. Remove the pork chops from the skillet and set them aside.
- Cook the Onions and Garlic:
- In the same skillet, add the sliced onion and cook for about 5 minutes, or until they are softened and starting to caramelize.
- Add the minced garlic and cook for another minute, until fragrant.
- Prepare the Sauce:
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream, Dijon mustard, thyme, and rosemary. Let the sauce simmer for 2-3 minutes, until it starts to thicken slightly.
- Combine and Cook:
- Return the pork chops to the skillet, along with any accumulated juices.
- Reduce the heat to low and let the pork chops simmer in the sauce for 10-15 minutes, or until they are cooked through and the internal temperature reaches 145°F (63°C).
- Add Cheese and Finish:
- Sprinkle the grated Parmesan cheese over the pork chops and sauce.
- Cover the skillet and let it cook for another 2-3 minutes, until the cheese is melted and the sauce is thickened.
- Serve:
- Garnish with fresh parsley before serving.
- Serve the supreme pork chops with the creamy sauce over mashed potatoes, rice, or your favorite side dish.
