Supreme Pork Chops

Ingredients:

  • 4 bone-in pork chops, about 1 inch thick
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup Dijon mustard
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Pork Chops:
  • Season the pork chops on both sides with salt and pepper.
  1. Sear the Pork Chops:
  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the pork chops and sear for 3-4 minutes on each side, or until they are golden brown. Remove the pork chops from the skillet and set them aside.
  1. Cook the Onions and Garlic:
  • In the same skillet, add the sliced onion and cook for about 5 minutes, or until they are softened and starting to caramelize.
  • Add the minced garlic and cook for another minute, until fragrant.
  1. Prepare the Sauce:
  • Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  • Stir in the heavy cream, Dijon mustard, thyme, and rosemary. Let the sauce simmer for 2-3 minutes, until it starts to thicken slightly.
  1. Combine and Cook:
  • Return the pork chops to the skillet, along with any accumulated juices.
  • Reduce the heat to low and let the pork chops simmer in the sauce for 10-15 minutes, or until they are cooked through and the internal temperature reaches 145°F (63°C).
  1. Add Cheese and Finish:
  • Sprinkle the grated Parmesan cheese over the pork chops and sauce.
  • Cover the skillet and let it cook for another 2-3 minutes, until the cheese is melted and the sauce is thickened.
  1. Serve:
  • Garnish with fresh parsley before serving.
  • Serve the supreme pork chops with the creamy sauce over mashed potatoes, rice, or your favorite side dish.
