Vanilla and Lemon Ice Cream Recipe
Ingredients:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 vanilla bean (or 2 teaspoons vanilla extract)
- 1 lemon (zested and juiced)
- 4 egg yolks
- Pinch of salt
Instructions:
- Prepare the Vanilla Base:
- Split the vanilla bean lengthwise and scrape out the seeds. Add both the seeds and the bean pod to a saucepan.
- In the saucepan, combine the heavy cream, whole milk, and half of the sugar. Heat over medium heat until it’s just about to simmer. Remove from heat and let it sit for 30 minutes to allow the vanilla to infuse. If using vanilla extract, add it after removing the mixture from heat.
- Mix Egg Yolks and Sugar:
- In a bowl, whisk together the egg yolks, remaining sugar, and salt until the mixture becomes pale and slightly thickened.
- Combine and Cook:
- Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking.
- Return the mixture to the saucepan. Cook over medium-low heat, stirring constantly with a wooden spoon or heatproof spatula until it thickens enough to coat the back of the spoon (around 170°F/77°C). Do not let it boil.
- Add Lemon:
- Remove from heat and stir in the lemon zest and juice. If using vanilla extract instead of a bean, add it now.
- Chill the Mixture:
- Strain the mixture through a fine-mesh sieve into a clean bowl to remove any cooked egg bits and the vanilla bean pod.
- Place the bowl in an ice bath to cool it down quickly, then cover and refrigerate for at least 4 hours or overnight until it is completely chilled.
- Churn the Ice Cream:
- Pour the chilled custard into an ice cream maker and churn according to the manufacturer’s instructions until it reaches the consistency of soft-serve ice cream.
- Freeze:
- Transfer the churned ice cream into an airtight container and freeze for at least 4 hours or until firm.
- Serve:
- Scoop and enjoy your homemade vanilla and lemon ice cream!
