Walking Taco Casserole Recipe

Ingredients

  • For the Casserole:
  • 1 lb ground beef (or turkey)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chiles
  • 2 cups cooked rice (white or brown)
  • 2 cups shredded Mexican cheese (cheddar, Monterey Jack, etc.)
  • 1 cup crushed tortilla chips (plus extra for topping)
  • Optional: 1/2 cup sliced black olives, jalapeños, or diced bell peppers
  • For Toppings:
  • Shredded lettuce
  • Diced tomatoes
  • Sour cream
  • Salsa
  • Sliced green onions
  • Additional crushed tortilla chips

Instructions

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Cook the Meat:

  • In a large skillet over medium heat, add the ground beef and chopped onion. Cook until the meat is browned and the onion is softened, about 5-7 minutes. Drain any excess grease.

3. Add Flavor:

  • Stir in the minced garlic and cook for another minute. Add the taco seasoning and mix well.

4. Combine Ingredients:

  • In a large mixing bowl, combine the cooked meat mixture with black beans, corn, diced tomatoes, cooked rice, and 1 cup of shredded cheese. Mix until everything is well combined.

5. Assemble the Casserole:

  • In a greased 9×13 inch baking dish, spread half of the crushed tortilla chips on the bottom. Pour the beef and bean mixture over the chips. Top with the remaining crushed chips and the other cup of shredded cheese.

6. Bake:

  • Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly.

7. Add Toppings:

  • Remove from the oven and let it cool for a few minutes. Top with shredded lettuce, diced tomatoes, sour cream, salsa, sliced green onions, and any additional toppings you like.

8. Serve:

  • Serve hot and enjoy your Walking Taco Casserole!
