Wonton Soup

Ingredients:

For the Wontons:

  • 1/2 lb ground pork (or a mix of pork and shrimp for extra flavor)
  • 2 green onions (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon grated ginger
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper (optional for extra spice)
  • 20-24 wonton wrappers (store-bought or homemade)

For the Broth:

  • 6 cups chicken broth (preferably homemade or low-sodium for a cleaner flavor)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar (adds a nice tang)
  • 2 garlic cloves (smashed for flavor infusion)
  • 1-inch piece of fresh ginger (sliced)
  • 2 green onions (cut into long pieces)
  • A pinch of white pepper (optional)
  • Bok choy or spinach (optional, for added greens)

Method:

For the Wontons:

  1. Make the filling by combining the ground pork, green onions, garlic, soy sauce, sesame oil, ginger, rice vinegar, salt, and white pepper in a bowl. Mix until well-combined.
  2. Prepare the wonton wrappers: Place a small spoonful of filling in the center of each wrapper. Moisten the edges with water, fold into a triangle, and press to seal. You can leave them in triangles or fold the corners together to form traditional wonton shapes.
  3. Set aside the prepared wontons on a plate covered with a damp cloth to prevent drying.

For the Broth:

  1. In a large pot, bring the chicken broth, soy sauce, rice vinegar, garlic, ginger, and green onions to a boil. Lower the heat and simmer for about 10-15 minutes to infuse the flavors.
  2. Strain the broth to remove the garlic, ginger, and onions for a smooth, flavorful broth. If you’re adding greens like bok choy or spinach, you can add them now and simmer for another 2-3 minutes.

Cooking the Wontons:

  1. Bring the broth to a gentle boil. Carefully drop the wontons into the soup, making sure not to overcrowd the pot. Let them cook for 4-5 minutes, or until the wontons float to the surface and the filling is fully cooked.

Serving:

Ladle the wontons and broth into bowls, and garnish with chopped green onions, a drizzle of sesame oil, or chili oil for extra flavor. You can also add a dash of soy sauce or rice vinegar to each bowl if you like it tangier.
