These flaky and flavorful sausage rolls are perfect as a snack, appetizer, or even a quick meal. They’re easy to make and always a crowd-pleaser!

Ingredients

For the Sausage Filling:

  • 1 lb (450 g) ground pork (or your favorite sausage meat)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated onion (or finely minced)
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • 1/2 teaspoon dried thyme or sage
  • 1/2 teaspoon smoked paprika (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Dough:

  • 1 sheet puff pastry (store-bought or homemade), thawed
  • 1 large egg, beaten (for brushing)
  • 1 tablespoon sesame seeds or poppy seeds (optional, for garnish)

Instructions

  1. Preheat the Oven
  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  1. Prepare the Filling
  • In a mixing bowl, combine the ground pork, breadcrumbs, grated onion, garlic, parsley, thyme or sage, smoked paprika, salt, and pepper. Mix until well combined.
  1. Roll Out the Dough
  • Lightly flour your work surface and roll out the puff pastry into a large rectangle, about 10×12 inches (25×30 cm). Cut it in half lengthwise to create two long strips.
  1. Assemble the Sausage Rolls
  • Divide the sausage filling into two portions. Shape each portion into a long log and place it along the center of each pastry strip.
  • Fold the pastry over the filling, overlapping the edges slightly. Press the edges to seal and turn the rolls seam-side down.
  1. Cut and Glaze
  • Cut each log into smaller rolls, about 2–3 inches long. Place them on the prepared baking sheet.
  • Brush the tops with beaten egg and sprinkle with sesame or poppy seeds, if desired.
  1. Bake
  • Bake for 20–25 minutes, or until the pastry is golden brown and puffed, and the sausage is cooked through.
  1. Serve
  • Let the rolls cool slightly before serving. Serve with ketchup, mustard, or a tangy dipping sauce.

Tips

  • For extra flavor, add a tablespoon of Dijon mustard to the filling.
  • Make them ahead: Assemble the rolls and freeze them before baking. Bake directly from frozen, adding a few extra minutes to the cooking time.
  • Try variations with chicken sausage, turkey sausage, or a vegetarian sausage alternative.

Enjoy these flaky, savory treats—perfect for any occasion! 🥐✨
