Ingredients:

  • 1 cup peanut butter (or almond butter)
  • 1 cup sugar substitute (like Stevia, Swerve, or monk fruit)
  • 2 large eggs

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan or line it with parchment paper.
  2. In a large mixing bowl, combine the peanut butter (or almond butter) and sugar substitute. Stir until smooth.
  3. Add the eggs one at a time and mix until fully incorporated.
  4. Pour the batter into the prepared pan and smooth the top.
  5. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan before serving.
