Quiche Lorraine

Ingredients:

For the Pastry:

  • 1 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter (cubed)
  • 3-4 tbsp ice water

For the Filling:

  • 6 slices of bacon (chopped)
  • 1 small onion (finely chopped, optional)
  • 1 cup shredded Gruyère cheese (or Swiss cheese)
  • 3 large eggs
  • 1 1/4 cups heavy cream (or half-and-half)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Pinch of ground nutmeg (optional)

Instructions:

Make the Pastry:

  1. Prepare the Dough:
  • In a mixing bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Gradually add ice water, 1 tablespoon at a time, until the dough comes together. Do not overmix.
  1. Chill the Dough:
  • Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  1. Roll and Pre-Bake:
  • Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and fit it into a 9-inch tart or pie pan. Trim the edges and prick the bottom with a fork.
  • Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and bake for another 5 minutes. Let it cool slightly.

Make the Filling:

  1. Cook the Bacon and Onion:
  • In a skillet, cook the chopped bacon over medium heat until crisp. Remove and drain on paper towels. If using onion, sauté it in the bacon fat until softened.
  1. Assemble the Filling:
  • Sprinkle the cooked bacon, onion, and shredded cheese evenly over the pre-baked crust.
  1. Prepare the Custard:
  • In a bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg. Pour the mixture over the bacon and cheese in the crust.

Bake the Quiche:

  1. Bake:
  • Bake in the preheated oven for 30-35 minutes, or until the filling is set and lightly golden. The center should jiggle slightly but not be liquid.
  1. Cool and Serve:
  • Allow the quiche to cool for 5-10 minutes before slicing. Serve warm or at room temperature.
