Instructions:

  1. Preheat the Oven: Preheat your oven to 325°F (160°C).
  2. Season and Sear the Ribs:
  • Pat the short ribs dry with paper towels and season generously with salt and pepper.
  • In a large Dutch oven or oven-safe pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.
  1. Sauté the Vegetables:

  • Cover the pot with a lid and transfer to the preheated oven. Braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.

  • Remove the pot from the oven and discard the bay leaf. Serve the short ribs with the braising liquid spooned over the top, garnished with fresh parsley.
