Crockpot Cowboy Soup Recipe

Ingredients:

  • 1 pound (450 g) ground beef or turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 can (15 oz) kidney beans (drained and rinsed)
  • 1 can (15 oz) corn (drained)
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 2 cups beef or chicken broth
  • 1 packet taco seasoning
  • 1 teaspoon chili powder (optional, for extra heat)
  • Salt and pepper to taste
  • Fresh cilantro or green onions (for garnish)

Instructions:

  1. Brown the Meat:
  • In a skillet over medium heat, brown the ground beef or turkey with the chopped onion and minced garlic. Drain any excess fat.
  1. Add to Crockpot:
  • Transfer the cooked meat mixture to the crockpot. Add the black beans, kidney beans, corn, diced tomatoes, broth, taco seasoning, chili powder, salt, and pepper. Stir to combine.
  1. Cook:
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until everything is heated through and flavors meld.
  1. Serve:
  • Ladle the soup into bowls and garnish with fresh cilantro or green onions if desired.
