No-Bake Decadent Chocolate Éclair Dessert

Ingredients:

  • 2 packages (3.4 oz each) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 container (8 oz) whipped topping (like Cool Whip), thawed
  • 1 box (14.4 oz) graham crackers
  • 1 cup semisweet chocolate chips
  • 1/3 cup heavy cream
  • 2 tablespoons light corn syrup
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Pudding Mixture:
  • In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk until smooth and thickened, about 2-3 minutes.
  • Gently fold in the whipped topping until well combined and the mixture is smooth.
  1. Assemble the Dessert:
  • Line the bottom of a 9×13 inch baking dish with a single layer of graham crackers, breaking them as necessary to fit.
  • Spread half of the pudding mixture evenly over the graham crackers.
  • Add another layer of graham crackers on top of the pudding mixture.
  • Spread the remaining pudding mixture over the second layer of graham crackers.
  • Finish with a final layer of graham crackers on top.
  1. Prepare the Chocolate Ganache:
  • In a microwave-safe bowl, combine the chocolate chips, heavy cream, and corn syrup.
  • Microwave in 30-second intervals, stirring after each interval, until the chocolate is fully melted and the mixture is smooth.
  • Stir in the vanilla extract.
  1. Finish the Dessert:
  • Pour the chocolate ganache over the top layer of graham crackers, spreading it evenly with a spatula to cover completely.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the graham crackers to soften.
