Easy Hamburger Potato Casserole

Ingredients:

  • 1 lb ground beef
  • 4-5 medium potatoes, thinly sliced
  • 1 small onion, diced
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1 cup milk
  • 1 cup shredded cheddar cheese (plus extra for topping, if desired)
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika (optional, for extra flavor)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat Oven
    Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Brown the Beef
    In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked. Drain any excess fat. Season with salt, pepper, garlic powder, and smoked paprika. Set aside.
  3. Prepare the Sauce
    In a mixing bowl, whisk together the cream of mushroom soup and milk until smooth.
  4. Layer the Casserole
    In the prepared baking dish, layer half of the sliced potatoes in an even layer. Sprinkle with a bit of salt and pepper. Spread half of the cooked ground beef mixture over the potatoes, then pour half of the soup mixture over the top. Sprinkle half of the shredded cheese on top. Repeat the layers with the remaining potatoes, beef mixture, soup mixture, and cheese.
  5. Bake
    Cover the baking dish with aluminum foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
  6. Garnish and Serve
    Allow the casserole to cool for a few minutes. Garnish with chopped parsley if desired, and serve warm.
