  • 2 pounds (900 g) pork shoulder or pork loin
  • 1 can (20 oz) pineapple chunks (in juice, drained, reserve juice)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup rice vinegar (or apple cider vinegar)
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger (or fresh grated ginger)
  • 1 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper to taste
  • Cooked rice (for serving)
  • Chopped green onions and sesame seeds (for garnish)

Instructions:

  1. Prepare the Pork:
  • Season the pork shoulder with salt and pepper. Place it in the slow cooker.
  1. Make the Sauce:
  • In a bowl, combine the reserved pineapple juice, soy sauce, brown sugar, rice vinegar, garlic, ginger, and red pepper flakes (if using). Mix well.
