Snickers Special-K Bars

Ingredients:

  • Bars:
  • 6 cups Special K cereal
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup chopped peanuts (optional for extra crunch)
  • Topping:
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips
  • 1 cup milk chocolate chips
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter

Instructions:

  1. Prepare the Pan:
  • Line a 9×13-inch baking pan with parchment paper, allowing some overhang for easy removal. Lightly grease the parchment paper.
  1. Make the Base:
  • In a large saucepan, combine sugar and light corn syrup. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  • Remove from heat and stir in peanut butter, vanilla extract, and salt until smooth and well combined.
  • Fold in Special K cereal and chopped peanuts (if using) until evenly coated.
  1. Press the Mixture:
  • Transfer the cereal mixture to the prepared baking pan. Press it firmly and evenly into the pan using a spatula or your hands.
  1. Prepare the Topping:
  • In a microwave-safe bowl, combine semi-sweet chocolate chips, butterscotch chips, milk chocolate chips, heavy cream, and unsalted butter.
  • Microwave in 30-second intervals, stirring after each interval, until the mixture is melted and smooth.
  1. Apply the Topping:
  • Pour the melted chocolate mixture over the cereal base. Spread it evenly with a spatula.
  1. Cool and Set:
  • Allow the bars to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours or until the topping is firm.
  1. Serve:
  • Once set, use the parchment paper overhang to lift the bars out of the pan. Cut into squares or rectangles using a sharp knife.
