These Spicy Mexican Street Corn Bites are a fun and flavorful appetizer inspired by “elote,” the classic Mexican street corn. Perfect for parties or snacks!
Ingredients
For the Bites:
- 2 cups corn kernels (fresh, frozen, or canned, drained)
- 1/2 cup all-purpose flour
- 1/2 cup cornmeal
- 1/3 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for extra spice)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, lightly beaten
- 1/4 cup milk
- Oil, for frying
For the Topping:
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 teaspoon chili powder
- Juice of 1 lime
- 1/3 cup crumbled cotija cheese (or feta)
- Chopped fresh cilantro, for garnish
Instructions
- Prepare the Mixture
- In a large bowl, combine corn kernels, flour, cornmeal, Parmesan, garlic powder, smoked paprika, cayenne (if using), salt, and black pepper.
- Add the egg and milk, mixing until a thick batter forms.
- Shape the Bites
- Scoop about 1 tablespoon of the mixture and shape it into a small patty or ball. Repeat with the remaining mixture.
- Fry the Bites
- Heat about 1/4 inch of oil in a skillet over medium heat. Once hot, fry the corn bites in batches for 2–3 minutes per side, or until golden brown and crispy. Transfer to a plate lined with paper towels to drain excess oil.
- Prepare the Topping
- In a small bowl, mix mayonnaise, sour cream, chili powder, and lime juice until smooth.
- Assemble
- Drizzle the creamy topping over the corn bites. Sprinkle with cotija cheese and chopped cilantro.
- Serve
- Serve warm with lime wedges on the side for extra zest.
Tips
- For extra crunch, add some finely chopped jalapeños to the batter.
- You can bake or air fry the bites for a healthier option. Bake at 400°F (200°C) for 15–20 minutes, flipping halfway through.
