Big Batch Classic Chili

Making a huge pot of chili is a fantastic idea! Here’s a classic, hearty chili recipe perfect for big gatherings or meal prepping. Feel free to adjust the spice level and toppings to your taste!

Ingredients:

  • 3 lbs ground beef (or a mix of ground beef and pork/turkey)
  • 2 large onions, diced
  • 3 bell peppers (green, red, or yellow), diced
  • 4 cloves garlic, minced
  • 4 cans (15 oz each) kidney beans, drained and rinsed
  • 4 cans (15 oz each) diced tomatoes with their juices
  • 1 can (6 oz) tomato paste
  • 1 can (4 oz) diced green chiles (optional, for extra heat)
  • 4 cups beef or chicken broth
  • 4 tbsp chili powder
  • 2 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 1 tbsp dried oregano
  • 2 tsp salt (adjust to taste)
  • 1 tsp black pepper
  • 1-2 tsp cayenne pepper (optional, for extra heat)

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Chopped green onions
  • Fresh cilantro
  • Avocado slices
  • Crushed tortilla chips

Instructions:

  1. Cook the Meat
    In a large pot, brown the ground beef over medium-high heat. Break it up with a spoon, cooking until no pink remains. Drain any excess fat if needed.
  2. Add Veggies
    Add diced onions, bell peppers, and garlic to the pot. Sauté for about 5 minutes or until softened.
  3. Spice It Up
    Add chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne (if using). Stir well to coat the meat and veggies with the spices. Let it cook for 2-3 minutes until fragrant.
