Chicken Bacon Ranch Pasta

Ingredients:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 6 slices bacon, chopped
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup frozen peas (optional)
  • 8 oz (225g) pasta (penne, rotini, or fusilli work well)
  • Chopped fresh parsley (for garnish)

Instructions:

  1. Cook Pasta:
  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  1. Prepare Chicken:
  • Season the chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Cook the chicken breasts for 5-7 minutes on each side, or until cooked through and golden brown. The internal temperature should reach 165°F (74°C).
  • Remove the chicken from the skillet and let it rest before slicing it into bite-sized pieces.
  1. Cook Bacon:
  • In the same skillet, add the chopped bacon. Cook until crispy, then remove the bacon with a slotted spoon and drain on paper towels. Discard excess bacon fat, leaving a small amount for flavor.
  1. Sauté Vegetables:
  • In the same skillet, add the chopped onion and cook until translucent, about 2-3 minutes.
  • Add the minced garlic and cook for another 30 seconds until fragrant.
  1. Make Sauce:
  • Pour in the heavy cream and chicken broth, stirring to combine.
  • Stir in the ranch seasoning mix and bring the mixture to a simmer. Let it cook for 3-4 minutes until slightly thickened.
  1. Combine Ingredients:
  • Add the shredded cheddar cheese to the sauce, stirring until melted and smooth.
  • If using, stir in the frozen peas and cook for 2 minutes until heated through.
  • Add the cooked pasta to the skillet and toss to coat in the sauce.
  • Fold in the cooked chicken and crispy bacon.
  1. Serve:
  • Garnish with chopped fresh parsley if desired.
  • Serve immediately.

Tips:

  • You can substitute other types of cheese, like mozzarella or Parmesan, for a different flavor.
  • For added crunch, you can sprinkle some extra bacon or breadcrumbs on top before serving.
