Sablés Diamant Vanille Recipe

Ingredients:

  • 250 g unsalted butter, softened
  • 100 g powdered sugar
  • 1 vanilla bean (or 1 teaspoon vanilla extract)
  • 1 egg yolk
  • 320 g all-purpose flour
  • 1 pinch of salt
  • Granulated sugar (for coating)

Instructions:

Step 1: Prepare the Dough

  1. Mix the Butter and Sugar:
  • In a mixing bowl, cream the softened butter and powdered sugar together until light and fluffy.
  1. Add Vanilla:
  • Split the vanilla bean and scrape out the seeds (or add vanilla extract) and mix into the butter-sugar mixture.
  1. Add Egg Yolk:
  • Mix in the egg yolk until well combined.
  1. Add Flour and Salt:
  • Gradually add the flour and a pinch of salt, mixing until a soft dough forms. Avoid overmixing to keep the cookies tender.

Step 2: Shape the Dough

  1. Form Logs:
  • Divide the dough into two portions. Roll each portion into a log shape, about 4 cm (1.5 inches) in diameter.
  1. Chill the Dough:
  • Wrap the logs in plastic wrap and refrigerate for at least 1-2 hours, or until firm enough to slice.

Step 3: Coat and Slice

  1. Coat with Sugar:
  • Once the dough is firm, roll each log in granulated sugar, pressing lightly so the sugar sticks all around.
  1. Slice the Dough:
  • Using a sharp knife, slice the logs into rounds about 1 cm thick.

Step 4: Bake

  1. Preheat the Oven:
  • Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  1. Bake the Cookies:
  • Place the cookie slices on the prepared baking sheet, spacing them slightly apart. Bake for 12-15 minutes, or until the edges are just starting to turn golden.

Step 5: Cool and Serve

  1. Cool the Cookies:
  • Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
