Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 4 cloves garlic, minced

  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine (or chicken broth)
  • 1/4 cup fresh parsley, chopped
  • 1/2 lemon, juiced

Instructions:

  1. Cook the Pasta:
  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.

  • In a large skillet, heat 3 tbsp olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.

  • In the same skillet, add the cherry tomatoes and cook for about 3-4 minutes until they soften. Pour in the white wine (or chicken broth) and let it simmer for about 2-3 minutes.

  • Return the shrimp to the skillet, and add the cooked pasta. If the mixture seems dry, gradually add reserved pasta water until the desired consistency is reached.
  • Stir in the fresh parsley and lemon juice, mixing everything well.
