Chicken Fritters

Ingredients:

  • 25 ounces leftover shredded chicken (or 2 cans of drained chicken)
  • 1 teaspoon Dijon mustard
  • 1 large egg
  • 1/3 teaspoon dried thyme
  • 1/2 cup breadcrumbs
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • Oil for frying (olive or vegetable oil)

Instructions:

  1. Prepare the Chicken Mixture:
  • In a large mixing bowl, combine the shredded chicken, Dijon mustard, egg, breadcrumbs, dried thyme, onion powder, garlic powder, salt, and black pepper.
  • Mix thoroughly until all ingredients are well incorporated and the mixture holds together.
  1. Form the Fritters:
  • Shape the chicken mixture into small patties, about 2 inches in diameter. The mixture should make approximately 12-15 fritters.
  1. Heat the Oil:
  • In a large skillet, heat a generous amount of oil over medium heat. You’ll need enough oil to coat the bottom of the skillet and fry the fritters evenly.
  1. Fry the Fritters:
  • Carefully place the patties into the hot oil, making sure not to overcrowd the skillet. Cook the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
  • Use a slotted spoon to transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.
  1. Serve:
  • Serve the chicken fritters warm with your favorite dipping sauce. They are perfect as an appetizer or a main meal.

Tips:

  • Dipping Sauces: These fritters pair well with a variety of dipping sauces such as ranch, barbecue, or honey mustard.
  • Texture: If the mixture is too wet, add a bit more breadcrumbs to help the fritters hold their shape.
  • Make-Ahead: You can prepare the fritters ahead of time and freeze them. Reheat in a hot oven or skillet before serving.

These Chicken Fritters are crispy on the outside and tender on the inside, making them a delicious and versatile addition to any meal. Enjoy your cooking! 🍗✨
