Greek Chicken Gyros

Ingredients:

For the Chicken Marinade:

  • 1 lb (450g) boneless, skinless chicken breasts or thighs
  • 3 tablespoons olive oil
  • 3 tablespoons plain Greek yogurt
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tablespoon red wine vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1 cucumber, grated and excess water squeezed out
  • 2 cloves garlic, minced
  • Juice of 1/2 lemon
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper, to taste

For the Gyros:

  • 4-6 pita bread or flatbreads
  • 1 red onion, thinly sliced
  • 1 tomato, diced
  • 1/2 cucumber, diced
  • 1/4 cup crumbled feta cheese
  • Fresh parsley, chopped (optional)

Instructions:

  1. Marinate the Chicken:
  • In a large bowl, mix together the olive oil, Greek yogurt, minced garlic, lemon juice, red wine vinegar, oregano, cumin, paprika, salt, and pepper.
  • Add the chicken to the marinade, ensuring it is well coated. Cover and refrigerate for at least 1 hour, or up to overnight for best flavor.
  1. Prepare the Tzatziki Sauce:
  • In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, dill, salt, and pepper.
  • Mix well and refrigerate until ready to use.
  1. Cook the Chicken:
  • Preheat your grill or a skillet over medium-high heat.
  • Remove the chicken from the marinade and cook for about 5-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  • Once cooked, let the chicken rest for a few minutes, then slice it into thin strips.
  1. Assemble the Gyros:
  • Warm the pita bread or flatbreads in the oven or on a skillet.
  • Spread a generous amount of tzatziki sauce on each pita.
  • Top with slices of chicken, red onion, tomato, cucumber, feta cheese, and parsley if desired.
  1. Serve:
  • Fold the pita bread around the fillings to create a wrap.
  • Serve immediately and enjoy your homemade Greek Chicken Gyros!
